Spotlight: Semilla


Food-truck-turned-brick-and-mortar restaurant Semilla offers unique riffs on classic Mexican dishes. When you step into the pink interior of the dining area, you just know you are in for a treat. Their menu is always changing, so chances are some of the dishes I tried may no longer be available when you read this. However, I am confident that whatever new menu items emerge throughout the coming weeks will also be excellent.


The appetizers alone are worth the trip. Who needs entrees when you have a spread like the one below? (Spoiler alert: you're going to want the entrees too.)

Queso, guac, and chips, oh my!

The queso flameado comes to the table "en fuego" and deserves its own closeup.

These are nacho average nachos - the chips are topped with smoked trout, roe, and pickled onion.

Front and center on this plate is the crispy brussels sprout taco (my personal favorite) as well as pulled pork, tempura grouper, and chicken.


Only available on Thursdays, the Fried Chicken special features a masa-coated fried half chicken with jalapeno agave glaze, and a side of rice and black beans.

Saving room for dessert is nearly impossible, but it's worth attempting. Your reward is a plate of dulce-de-leche-filled churros coated in cinnamon and sugar.
